Preheat the oven to 150°C to warm it up while preparing the ingredients. Meanwhile, sift both types of flour together and set aside.

Prepare the yolk mixture: Place the egg yolks into a mixing bowl and whisk until light and fluffy. Once the yolks are well combined and the color turns pale, add vanilla extract and mix well.

Add the salt, yogurt, and sunflower oil to the mixture and stir until smooth and fully combined.

Gradually add the sifted Fancy Carp Jasmine Rice Flour and Cornstarch into the yolk mixture.

Gently fold the flour into the mixture until fully incorporated. Make sure there are no white lumps and the batter is smooth.

Prepare the egg white mixture: Place the egg whites and lemon juice into a mixing bowl and beat at medium speed until fine bubbles form. Gradually add the sugar, one portion at a time, until all the sugar is incorporated.

Beat the egg whites until soft peaks form. Divide the egg whites into three portions and fold them into the yolk mixture in batches, mixing gently after each addition.

Once all the ingredients are well combined, pour the batter into a lined baking pan (if using a removable base pan, wrap it securely with aluminum foil). Bake using the water bath method at 140°C with top and bottom heat for about 50 minutes or until fully cooked.

After baking, let the cake cool slightly before removing it from the pan. Serve with fruit sauce, honey, and fresh fruits.
