Raw material

  • 500g. Boiled sweet potato
  • 250g. Fancy Carp brand Tapioca Starch
  • 250g. Fancy Carp brand Gluten Free Crispy Batter Mix
  • 165g. Sugar
  • 1 tsp Salt

 

How to cook

Mix gluten-free crispy batter mix, tapioca starch, mashed boiled sweet potato, sugar, and salt together until well combined.

Once the mixture is smooth and well combined, shape it into small round balls as shown.

Heat a pan with oil over medium heat. Wait until the oil is warm (but not too hot), then add the balls. Do not stir them at first. Once the surface of the balls begins to cook and set, gently stir them to prevent sticking.

Once the balls start to crisp up and expand, gently press them with a spatula. This technique will make the balls hollow, puffed, crispy, and less oily.

Keep stirring the balls regularly until they are cooked to your desired level of crispiness. Remove them from the oil and let them drain before serving.
