“Japanese Egg Cake” is a soft, fluffy, and aromatic dessert that’s incredibly easy to make. All you need is a rice cooker, though an oven works just as well. Simply whisk eggs and sugar, add soft gluten-free flour, and mix in a few more ingredients. With just a few minutes of cooking, you’ll have a light, mildly sweet, and beautifully risen cake that anyone can make. Not only do you get to create your own delightful flavors, but you’ll also enjoy a treat that feels like it’s straight out of a famous Japanese bakery.

Raw material

  • Jasmine Rice Flour - 9 Tbsp (or 100 grams)
  • Vegetable oil - 4 Tbsp
  • Unsweetened milk - 80 ml
  • Egg yolks (size 2) - 6
  • Salt - 1/4 tsp (a pinch)

  • Egg whites (size 2) - 6
  • Granulated sugar - 8 Tbsp (80 grams)
  • Lemon juice - 1 tsp

 

How to cook

Warm the vegetable oil in a hot water bath or microwave for 2 minutes, then set aside.

Separate the egg yolks and egg whites and set them aside.

In a mixing bowl, pour in the warm oil, sift the rice flour, baking powder, and salt, then gently whisk the mixture. Add the milk and continue whisking until smooth.

Add the egg yolks into the mixture and stir until the batter is smooth and well-combined. Cover and set aside.

Add lemon juice to the egg whites. Using an electric mixer, beat the whites until they form large bubbles. Gradually add the sugar in three parts (only add more sugar when the previous portion has dissolved). Beat until soft peaks form.

Divide the beaten egg whites into three portions. Gradually fold each portion into the flour mixture, stirring in the same direction each time until the batter is smooth and well-mixed.

Pour the batter into a rice cooker and press the “cook” button. Alternatively, if using an oven, bake at 150°C (300°F) for around 50 minutes with top and bottom heat. The cake is done when a toothpick inserted into the center comes out clean. Slice and serve!
