Raw material

  • Fancy Carp Brand Brown Rice Flour - 270 grams (can substitute with jasmine rice flour or riceberry rice flour)
  • Baking powder - 1 teaspoon
  • Baking soda - 1 teaspoon
  • Brown sugar - 150 grams
  • Salt - 1/4 teaspoon
  • Egg yolks - 3
  • Butter or vegetable oil - 100 grams
  • Milk - 100 grams
  • Mashed ripe banana - 350 grams
  • Vanilla extract - 1 teaspoon
  • Roasted almond sticks - 50 grams
  • Roasted macadamia nuts - 50 grams

 

How to cook

Sift the Fancy Carp Brand Brown rice flour, baking powder, and baking soda together. Add the brown sugar and salt, mix well, and set aside.

In a mixing bowl, combine the milk, egg yolks, melted butter (or oil), and vanilla extract. Mix until well combined.

Add the wet mixture to the dry flour mixture, stirring until smooth. Then, add the mashed banana and mix until fully combined. Pour the batter into a prepared cake pan and top with the almonds and macadamia nuts.

Preheat the oven to 180°C (356°F). Bake for 25-30 minutes with both top and bottom heat.

Remove the banana cake from the oven. To check doneness, insert a toothpick into the center; if it comes out clean, the cake is ready to enjoy!
