They’re full of buttery aroma and fresh blueberries, giving you a great energy boost.

These muffins, made with Thai rice flour, are easy to bake at home. We’re using Fancy Carp brand Jasmine Rice Flour, made from 100% Thai jasmine rice, which adds a unique fragrance to the muffins. The result is soft, fluffy muffins that are delicious in every bite. Follow this simple recipe and start baking! You can also swap in Fancy Carp brand Brown Rice Flour to boost the nutritional value.

Raw material

  • Fancy Carp Brand Jasmine Rice Flour - 135 g.
  • Unsalted butter - 60 g.
  • Suger 100 g.
  • Egg - 1
  • Salt - 1/4 teaspoon
  • Baking powder - 1 teaspoon
  • Milk - 40 g.
  • Yogurt - 20 g.
  • Vanilla extract - ½ teaspoon
  • Blueberries - 120 g. + 12 whole blueberries

 

How to cook

Sift the flour, salt, and baking powder into a mixing bowl. Set aside.

Mix the milk, yogurt, and vanilla extract together. Set aside.

Beat the butter and sugar until well combined, then add the eggs and continue beating.

Add half of the flour mixture and beat until combined. Then add the milk mixture, followed by the remaining flour, and beat until smooth.

Gently fold in 120 grams of blueberries and stir until evenly distributed. Divide the batter evenly into 6 muffin cups lined with paper.

Preheat the oven to 190°C. Prepare 6 muffin cups by lining them with paper liners.

Top each muffin with 2 blueberries and bake for 25 minutes. Let the muffins cool in the pan for 5 minutes before serving.
