“Banana Cake” is a dessert many of us have known since childhood, and it’s incredibly easy to make. With only a few ingredients and simple steps, even beginners can do it. The cake has a soft and fluffy texture with a gentle sweetness, perfect to enjoy with morning coffee or as a snack. In this recipe, we’re using Fancy Carp brand Jasmine Rice Flour, which is a gluten-free Thai rice flour made from 100% jasmine rice. Its fine texture and unique fragrance from the jasmine rice make our cake soft and fluffy like no other. It’s also suitable for those with gluten or wheat allergies. Raw material

  • 190 grams Fancy Carp Brand Jasmine Rice Flour
  • 190 grams Ripe bananas
  • 2 large Eggs
  • 170 grams Powdered sugar
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 170 grams Rice bran oil
  • 65 grams Milk
  • 60 grams Water
  • 1 teaspoon Vanilla extract

 

How to cook

Mix the dry ingredients: flour, baking powder, baking soda, and salt. Stir well and set aside.

Mash the ripe bananas until smooth. Using very ripe bananas will give the cake a naturally sweet and fragrant flavor.

In a mixing bowl, combine the eggs, powdered sugar, milk, water, and vanilla extract. Beat with a mixer on medium speed for 2 minutes or until the sugar dissolves. Gradually add the rice bran oil and continue beating for 1 more minute. Then, add the mashed bananas and beat on medium speed for another minute.

Sift the dry ingredients from step 1 into the wet mixture and stir to combine. Beat on medium speed for 1 minute, scraping the sides of the bowl to ensure everything is mixed. Once the batter is smooth, let it rest for 10 minutes. Meanwhile, preheat the oven to 180°C with the fan on, using top and bottom heat.

Line the baking pan with parchment paper and pour the batter into the pan. Tap the pan gently to release air bubbles, then bake at 180°C for 20 minutes. Reduce the heat to 160°C and bake for another 45 minutes, or until fully cooked.

Remove the cake from the oven and let it cool in the pan. Once cooled, remove the cake from the pan and it’s ready to serve!
